Mashed Parsnips

ParsnipsDid you know that the parsnip w as the American potato before the Irish brought the one we love so well to America’s shores in the 1840s? This vegetable is often overlooked, and it shouldn’t be because it is a bit lower in carbohydrates than the average potato, very healthy and quite delicious. Prepared the following way, they actually taste like another type of potato. Try it. You will love it!

2 packages parsnips (peeled)
Butter
Salt and pepper to taste

Place the parsnips in a large pot of slightly salted water and bring to a boil. Lower heat and simmer for at least a half-hour or until the parsnips are soft enough to be mashed.
Mash the parsnips in a bowl, adding butter and salt and pepper to taste.
Serve hot.

Serves about 4.
